This recipe actually has more of an interesting story. When I was pregnant, I read a lot about what to prepare for in advance. One of the top suggestions was to freeze food, so I have meals for the first month or so after the baby was born.
I thought this was a great plan, but I had no idea what to make and freeze. I needed to have a variety of meals ready and I was running out of options. So I did some research and came across a variation of this recipe. This turned out good. I was surprised. Over the years, I’ve adapted it and it’s still a top favorite dish of mine! It’s quick, easy and pretty good frozen and reheated! Just pop it in the oven or air fryer and it’s practically fresh again. Just like the garlic lemon chicken recipe, I like to mix the ingredients early and let the chicken marinate for the afternoon.
